Saturday

Breakfast: Venti Chai

Lunch: Veggie lasagna

Snack: Peach

Dinner: McAlisters turkey sandwich on wheat w/mustard. baked lays

Snack: Honeydew melon and grapes

Activity: Did toning zumba this morning for an hour.

The bread actually turned out quite well. It was just crusty on top. I'm taking a carb break this week though. Bread, cake, cupcakes...I was on overload this week. More protein, fruits & veggies this week.

In other news....Guess who got approved to buy a food truck????? ME!!! It's actually happening. Skookum - Local Food on the Go has an EIN number and now hopefully has a truck. So exciting!

Is it a sign if your radiator fan goes out and costs a ton of money right after you get approved for the loan of your dreams??? Yuck.

Double yuck. Here is the reason I hate facebook. I got back on and Amanda posted this thing about love me comment, think i'm a good friend like this. So I commented and said you know I love you and that creepy Ricky commented and said I was a cutie. Well facebook only lasted for like 10 minutes this time. What a weirdo.

Home!

I'm home! My test went really well and the trip was actually kind of fun (it's fun to travel by yourself--I've never really done it before). Anyway, since I just relied on the hotel shuttle to get me to/from my test and to/from the airport, I ate every meal at the hotel. It was excellent food, but not always healthy... Anyway, I'm back and ready to get back into the groove of healthy eating. Although, we really need groceries!

Breakfast: bacon, iced coffee
Lunch: low carb spaghetti
Dinner: Ghengis Grill stir-fry, Sake sunrise, 3 bites of cheesecake (we went out with Lauren and Joeal and all shared dessert).

Activity: Treadmill at the gym and some weights

Thursday

Breakfast: Peach, WW blueberry yogurt

Lunch: Veggie lasagna, flax seed bread w/butter

Dinner: Cafe do Brazil w/the girls

So I didn't update yesterday because I was so exhausted. We stayed up so late on Tuesday that I could barely function yesterday. Hoping I got caught up on my rest last night. I feel like this whole week I've been playing catch up...like I'm always 15 minutes behind. I'm hoping to really get rested and caught up this weekend.

I hope your test is/went amazing!!! We really need to get together soon so I can hear about all of your med school stuff in person.

Tuesday

I've been running around doing errands this morning and haven't really eaten anything yet.  James went back to school today (the kids don't come back until next monday though) so I've been trying to be productive.  It is really hard to get stuff done when he is home and I'm not sure why since he basically does his own thing most of the time...

In better news, I finished my residency application last night.  My personal statement and CV are complete, as is all the other crap I had to put into it.  Now all I have to do is decide which schools I want to send it to and press "submit" on September 1st!  (Wow, I'm ahead of schedule even!)

Now I just have to study and pack today.  I leave tomorrow morning (I have a long lay-over in Dallas-boo). Test is on Thursday.  Be back on Friday.  I will be at the mercy of the hotel restaurant and the testing center for my food, so who knows what I'll be eating. 


Breakfast:  iced coffee (not much a breakfast, but it'll work)
Lunch: tomatoes,mac and cheese
Snack:  apple
Dinner:  steak and veggies

Also, remember: 15-20 minutes of working out is better than nothing!  Even if it is just stretching out really well or doing some push-ups/crunches/lunges!

Tuesday

Well I didn't get up to go work out. I woke up every hour on the hour last night and am completely exhausted. I'm ready for the weekend so I can catch up on some rest.

Breakfast: chocolate almond milk

Lunch: Lasagna and a peach

Dinner: Thinking about making some sort of easy pasta dish w/tomato mozzarella salad and something for dessert. Although that means no meat and he is a guy and will probably want meat. I'm still taking suggestions!

okay new dinner menu: grilled pork chops, grilled sweet potato fries, zucchini, flax seed bread and flourless chocolate cake- I think.

If I can grab a quick workout in between work and dinner I'm going to try and do it. Trying to leave early so I can do a Jillian video while the bread is rising and then shower while cake is baking. We will see.

  • Dinner: schnitzl (I was bad, haha), mushrooms

 I really, really should have gotten off my butt yesterday and got groceries!

Lunch: Hot dog, hummus & veggies, peach

Dinner: Lasagna

Dessert: Light chocolate ice cream



I have to go to the dentist this morning. Really ready to get that over with. yuck.

I was perusing blogs and such and came across this one . It has some really cool recipes and I like her style. I'm going to attempt to make the homemade bread tonight and if it goes well I'd like to try the garlic knots she keeps talking about. Tell me what you think!

Also, did you read the Or-so-I-feel blog the other day about the airline magazine article about organic food? I thought it was pretty cool. If not here it is .

The lasagna was so good. It really just has veggies a little bit of cheese but it was very flavorful and very filling.

Went and got my Y membership tonight. Did 20 minutes on the elliptical and then walked 5, ran 5, walked 4, ran 4, etc and increased speed until got down to 1 and 1. It was a good feeling to not have to wait to run until 9:30 at night. They having a toning class at 5:30 so I'm going to try and see if I can do it. I have sort of a date tomorrow night and I'm cooking dinner so I won't have time to go to zumba so I'd like to get some exercise in tomorrow. And Wednesday morning they have spin class that I'm dying to try!

Sunday

Wow, I have been a complete bum today!  Probably because I know I have to get my ass in gear starting tomorrow!  I leave Wednesday for my next round of board exams in Houston and won't get back until Friday.  I'm ready for that to be over with. 

  • Breakfast:  iced coffee, 2 slices of bacon, little package of apple slices
  • Lunch:  low carb mac and cheese (I've finally found a use for that tiny little pot that came with our pots and pans--single servings of mac and cheese!!--Proud of myself for not making a huge pot and eating it all over the day.)
  • Snack:  1 cup black cherries
  • Dinner: tilapia is in the oven and hopefully we'll have some veggies--I'm in desperate need of some!
Not bad for not really putting any effort out today.  I've been watching mindless tv most of the day, haha!  Had to get caught up on my tivo.  

Sunday...The Day of Rest

Breakfast: Nothing....there are absolutely no groceries in my house at all. This is the barest my kitchen has ever been. Must buy groceries ASAP!!!

Lunch: Turkey sub w/baked chips (11)

Dinner: Salad and veggie pizza from the wedge (????)

I'm searching for bread recipes and something else new to try and make this week so I can get in my 2 recipe goal.

Doing zumba at 2. Ready to get back on the exercise train. I've really missed it these last couple of days. I feel so much better when I'm working out every day. I'm going to the YMCA tomorrow to sign up.
