Breakfast: Dark chocolate & Oat bar

Snack: Almond bar

Lunch: Amy's light enchiladas + gluten free tortilla chips (so good!)

Dinner: Looks like we are going to check out food trucks. Can't wait! All in the name of research.

Activity: Gym

I think I got all the truck stuff caught up last night except for insurance and paint quotes. I will try and call at lunch so this weekend I don't have anything to worry about. I feel like I'm back in school with a ton of homework. It's weird and I really haven't missed this feeling, haha. I know it will be worth it I just need to get past the first year. What a learning process though.

Friday!!

Thursday

Today's one of those days where I just can't seem to get things right!  Forgot my phone at home.  Missed an appointment! Arg, the list goes on!


  • breakfast: coffee, bacon, apple with PB
  • lunch: low carb mac and cheese, protein bar (terrible lunch, but I just grabbed it on the way out and I was already 20mins late!)
  • dinner: crab cakes with balsamic reduction dipping sauce, roasted white baby carrots, roasted yellow squash

Thursday

Breakfast: Breakfast sandwich & chocolate oat bar - still starving. Maybe I need more protein and less processed stuff. I bought the breakfast sandwiches bc I knew I'd be super busy this week. I will cook breakfast next week.

Lunch: ??? Work is providing. We are having a lunch and learn over estates today. Get excited.

Dinner: ??? No idea. I need to get a lot of truck stuff done so probably nothing fancy.

Activity: Zumba...really looking forward to this today.

I got 9 hours of sleep yesterday!!! Hallelujah.

Activity: Gym - Scratch that.

So tired. I haven't been going to sleep til 1:30 and getting up at 7 is finally catching up with me. I'm exhausted. I have so much stuff to do but I'm so tired that I'm going to bed and will hopefully tackle it in the morning.

Tuesaday

Lunch: 7 chips with salsa, Mexico Joes portabello melt skillet
Dinner: Taco Night (at James' request, haha, my schedule is already gone)
Snack: apple and PB

I forgot to tell you James re-did my room! But this also means that the treadmill has been transplanted to the bedroom and is still not set up (I feel like it was a toy that got shoved under the bed while the room got "cleaned"--men, hrmph).  My goal is to get it back set up and to make a little work-out area in there.  We'll see. I need to get back working out.  You should get back on facebook really quick and look at the pics I posted--my room is awesome now!

Tuesday 23rd

Breakfast: Breakfast sandwich

Lunch: Veggie sandwich w/eggplant soup (lunch w/Sarah)

Snack: Almond bar

Dinner: Chicken sandwich and baked chips from Arby's. We ate late because I had to work late and then I went to the gym for 45 minutes.

Activity: Elliptical for 30, running for 15

I forgot to tell you...I tried my first spin class yesterday. It was awesome! I loved it. I think the music is the best part. And my abs are sore from it today which I guess is good. I think the Y will turn out to be a good investment.

The health assessment is over! They just pricked my finger this time. Everything was good. They did body fat by making you hold this electro thing. I hope it's right because I was in the healthy range which made me feel good.

Monday

I am off this week!  No studying, no rotations, no nothing (except a few meetings and lots of errands).  I am trying to plan out all of the dinner meals for the week before I go shopping today. We'll see how it goes.

Sorry to hear you're having a little freak out.  :(  Lots of things to stress about in your life right now though!  Also, I meant to ask if you've seen the food truck show on Food Network??  If not, you should definitely watch it online!  It is a competition series, but it is pretty neat!  Maybe you could pick up tips from it because they travel to new cities and have to find the best places and see who can do the best in each city!  It's called The Great Food Truck Race.  Here's the link!

Activity: Running at gym

So I had my first freakout with the new guy. Sign #1 that this won't work out is when I start freaking out. I'm in the middle of starting this business so maybe it's better I'm on my own right now. We're so different anyway that it probably wasn't going to work. I wish I didn't have the tendency to overthink things but I can't stop. I gained 2 pounds last week (I'm blaming that on him) so maybe it's better this way all around. Ugh.

In other news lots of stuff to do for the truck this week so I just need to get my mind right and start getting some things done.

Breakfast: flax seed pancakes w/butter & honey

Dinner: Kashi pizza and low fat ice cream

Have to grocery shop today. Also, going to zumba at 2. Trying to get the YMCA schedules all organized so I can pick 2 new classes to try this week.

Need 1 more new recipe to try this week. The flax seed pancakes were delicious!

I'm going shopping for a suit today!  Hopefully there are some good ones somewhere.  I will be eating lunch (and possibly dinner) out, so who knows.  I'm hoping to go to Abuelo's for lunch so I can get the little street tacos (they are good and aren't a huge portion).
