Breakfast: 2 poached eggs on english muffin w/salsa

Lunch: soup w/crackers, apple & cheese

Snack: cottage cheese & pineapple

Dinner: Mexican casseroles (from Beth's Journey blog)

Activity: Gym Time (28 minutes on elliptical & 25 minutes on treadmill) 550 calories burned, 4.75 miles
