Muffin in a Minute Recipe:
- 1/4 c. milled or ground flax seed (on the baking aisle of WM)
- 1/2 tsp. baking powder
- 1 egg or 1/4 c. egg beaters
- 2 Splenda packets (or 2 tsp.)
- 1 tsp. of cinnamon/cocoa/pumpkin pie spice
- 2 tbs. of canned pumpkin OR 1 tsp. of EVOO/butter
- pinch of salt if you want
- Mix well in a large mug.
- Microwave for 1 minute (add 10 seconds if you find your muffin is not getting completely done on bottom).
- Remove from mug with butter knife and cut in half.
- Enjoy with spray butter or however.
- Made with pumpkin and egg beaters=3 points for a large and filling muffin.

ReplyDeleteIt is good. The texture is different because it is really low-carb, but I think it is good! Also, the flax has really good oils in it (but you can't count them toward your dailies...better than eating fish I think!)
